Ingredients
1 cup butter, softened1 cup sugar2 eggs1-1/2 teaspoons vanilla extract2-1/4 cups all-purpose flour1/2 teaspoon baking soda1/4 teaspoon salt2 cups chopped Brazil nuts1/2 cup sweetened shredded coconut
Preparation
In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in nuts and coconut.
Drop by tablespoonfuls 3 in. apart onto ungreased baking sheets. Bake at 350° for 10-12 minutes or until bottom of cookies are lightly browned. Remove to wire racks.
