Ingredients

2 3/4 c. unbleached all-purpose flour plus more for rolling

1 tbsp. sugar

1/2 tsp. baking soda

1/2 tsp. salt

8 tbsp. unsalted butter

1 c. plain yogurt

Water in a spray bottle for misting

Chopped dried herbs, spices, and/or seeds (such as mustard, fennel, cumin, sesame) as desired

kosher salt

Freshly ground black pepper

Preparation

Step 1Preheat the oven to 400 degrees. Place the flour, sugar, baking soda, and salt into a large bowl and mix well. Add the butter and cut in as for pie crust with a pastry blender or 2 knives until the mixture resembles cornmeal. Add the yogurt and stir with a fork until the mixture forms a dough.Step 2Break off marble-size pieces of dough and roll out on a lightly floured surface to 7-inch rounds that are less than 1/8-inch thick, even paper-thin. Place on ungreased baking sheets and mist with water. Sprinkle with any combination of seasoning, or any single seasoning. Bake until crisp and golden brown, 3 to 5 minutes. Transfer to wire racks to cool.
