Ingredients

Cooking spray 

1/2 c. (1 stick) butter

1 (15-oz.) can cream of mushroom soup

2 large eggs, beaten

1 c. mayonnaise

2 c. shredded cheddar

3/4 c. freshly grated Parmesan

1 tbsp. Dijon mustard

Kosher salt

Freshly ground black pepper

1 lb. frozen chopped broccoli, defrosted

crushed RITZ Crackers

Freshly chopped parsley, for garnish

Preparation

Step 1Preheat oven to 350º and grease a casserole dish with cooking spray. In a large saucepan, melt butter. Add soup, eggs, mayonnaise, cheddar, Parmesan, and mustard and season with salt and pepper.Step 2Layer broccoli on bottom of baking dish. Pour saucepan mixture over broccoli and sprinkle all over with RITZ. Step 3Bake until golden and bubbling, 30 minutes.Step 4Garnish with parsley before serving.

Can I use fresh or frozen broccoli? Both work well for this casserole! We recommend defrosting frozen broccoli first to make sure it cooks evenly.  Can I sub in other vegetables? Yes! This is our favorite thing to do. We think cauliflower, Brussels sprouts, and green beans all taste amazing in this casserole. Mix and match a few veggies too!  What about cheese? Now obviously sharp cheddar and broccoli go together like chocolate and peanut butter, BUT, we think this dish would be amazing with a spicy, melty pepper jack or maybe a mixture of gouda and gruyere! Honestly the sky is the limit here as long as you stick to good melting cheeses. Can I add meat? Absolutely! We love the add in some rotisserie chicken with the broccoli to make this casserole stretch further as a meal. It would also be great with some added bacon! How can I make it fancier? Though we love this dish for just how unfussy it is, you could take it to the next level by making your own cream of mushroom soup! How do I store it? If you manage to have any leftovers, store them in an airtight container — or cover your casserole dish in airtight wrap— and store in the fridge for no more than a week. When you’re ready to reheat, you can pop your entire casserole dish in the oven, or put a serving in a microwave-safe dish and pop it in the microwave. You can even prep this dish in advance to get ahead of your Thanksgiving sides! Simply prep it all in your casserole dish, and wait until topping with the RITZ crackers before you’re ready to bake. Can I freeze this casserole?  Absolutely! Wrap it tightly or place an airtight cover over your dish before freezing, and make sure to wait to top with the RITZ crackers before you’re ready to bake.
