Ingredients
1 bunch broccoli, cut into florets2 large eggs, lightly beaten2 large egg whites1/3 cup grated Parmesan cheese2 tablespoons all-purpose flour1/2 teaspoon salt1/2 teaspoon garlic powder1/2 teaspoon pepper2 tablespoons canola oilSalsa, optional
Preparation
Place broccoli in a steamer basket; place in a small saucepan over 1 in. of water. Bring to a boil; cover and steam until crisp-tender, 3-4 minutes. Coarsely chop broccoli and set aside.
In a large bowl, combine the eggs, egg whites, cheese, flour, salt, garlic powder and pepper. Stir in broccoli.
Heat 1 tablespoon oil in a large cast-iron or other heavy skillet over medium heat. Drop battered broccoli by heaping 1/8 cupfuls into oil; press lightly to flatten. Cook in batches until golden brown, 3-4 minutes on each side, using remaining oil as needed. Drain on paper towels. If desired, serve with salsa .
