Ingredients
1 large onion, chopped3 tablespoons vegetable oil4 large eggs, lightly beaten4 cups chopped fresh broccoli, cooked2 cups shredded mozzarella cheese1 carton (15 ounces) ricotta cheese1/3 cup grated Parmesan cheese1/4 teaspoon saltDash ground nutmeg1 unbaked pie pastry (9 inches)
Preparation
In a skillet, saute onion in oil until tender, about 5 minutes. Transfer to a large bowl; add eggs, broccoli, cheeses, salt and nutmeg. Pour into pie shell. Bake at 350° for 50-55 minutes or until a knife inserted in the center comes out clean.
