Ingredients
8 plum tomatoes, seeded and chopped1 cup chopped sweet onion1/4 cup grated Romano cheese1/4 cup minced fresh basil2 ounces thinly sliced prosciutto, finely chopped1 shallot, finely chopped3 garlic cloves, minced1/3 cup olive oil1/3 cup balsamic vinegar1 teaspoon minced fresh rosemary1/4 teaspoon pepper1/8 teaspoon hot pepper sauce, optional2 French bread baguettes (10-1/2 ounces each), cut into 1/4-inch slices
Preparation
In a large bowl, combine the first seven ingredients. In another bowl, whisk the oil, vinegar, rosemary, pepper and, if desired, pepper sauce. Pour over tomato mixture; toss to coat.
Place bread slices on ungreased baking sheets. Broil 3-4 in. from the heat or until golden brown, 1-2 minutes. With a slotted spoon, top each slice with tomato mixture.
