Ingredients

1 cup shredded dairy-free cheddar-flavored cheese1/2 cup vegan mayonnaise1/4 cup finely chopped onion1/4 cup finely chopped celery3 tablespoons Louisiana-style hot sauce1 tablespoon lemon juice1/2 teaspoon garlic powder1/4 teaspoon salt1/4 teaspoon pepper1 package (16 ounces) extra-firm tofu, drained1-1/2 cups fresh baby spinach6 spinach tortillas (8 inches)

Preparation

In a large bowl, combine the first 9 ingredients. Crumble tofu into bowl; mix well. Spoon about 1/2 cup tofu mixture down center of each tortilla; top with spinach. Fold bottom and sides of tortilla over filling and roll up.
