Ingredients
1 can (15-1/4 ounces) lima beans, rinsed and drained1 can (16 ounces) butter beans, rinsed and drained1 large sweet red pepper, chopped1 medium green pepper, chopped1 large onion, chopped4 garlic cloves, minced1/4 cup lemon juice1/4 cup olive oil2 tablespoons cider vinegar2 teaspoons ground cumin1/4 teaspoon pepper
Preparation
In a large bowl, combine the beans, peppers, onion and garlic. In a small bowl, combine the remaining ingredients. Pour over bean mixture and toss to coat. Chill until serving.
