Ingredients

1 cup chopped onion1 cup chopped green pepper6 green onions, sliced1/2 cup canola oil1/2 cup all-purpose flour3 cups water2 packages (16 ounces each) frozen corn1-1/2 pounds smoked sausage, cut into 1/4-inch pieces3 cups cubed fully cooked ham1 can (14-1/2 ounces) stewed tomatoes2 cups chopped peeled tomatoes1 can (6 ounces) tomato paste1/8 teaspoon cayenne pepper or to tasteSalt to tasteHot pepper sauce to taste

Preparation

In a Dutch oven, saute the onion, green pepper and green onions in oil for 5-6 minutes or until tender. Stir in flour and cook until bubbly. Gradually add water; bring to a boil. Add the corn, sausage, ham, tomatoes, tomato paste, cayenne, salt and pepper sauce.

Reduce heat; simmer, uncovered, for 1 hour, stirring occasionally.
