Ingredients
2 cups uncooked long grain rice3 tablespoons canola oil1 medium green pepper, diced1 small onion, chopped1 celery rib, thinly sliced2-1/4 cups water1 can (14-1/2 ounces) chicken broth1 medium tomato, diced1-1/2 teaspoons salt, optional1/2 to 1 teaspoon ground cumin1/4 teaspoon pepper1 cup cubed cooked pork
Preparation
In a large skillet, saute rice in oil until lightly browned. Add the green pepper, onion and celery; saute for 2-3 minutes. Stir in the water, broth, tomato, salt if desired, cumin and pepper. Bring to a boil. Reduce heat; cover and simmer for 18-20 minutes or until rice is tender. Stir in pork; heat through.
