Ingredients
1 tbsp. extra-virgin olive oil
6 oz. Spam, cut into 1/2" cubes
1/2 tsp. taco seasoning
1 tsp. cumin seeds
2 tbsp. extra-virgin olive oil
7 large eggs
1 tsp. everything bagel seasoning
1 tbsp. extra-virgin olive oil
1 c. cooked black beans
1/2 tsp. instant ramen packet seasoning
12 corn tortillas
Hot sauce, for serving
Preparation
Step 1Make the Spam: In a large skillet over medium heat, heat oil. Add Spam, taco seasoning, and cumin and cook, stirring occasionally, until Spam is golden and crispy. Transfer to a bowl.Step 2Make the eggs: To skillet, add 2 tablespoons more oil. In a medium bowl, whisk eggs with everything bagel seasoning until smooth. Add eggs to skillet and cook, stirring occasionally, until soft curds form. Transfer to a bowl.Step 3Make the beans: To skillet, add 1 tablespoon more oil. Add beans and seasoning and cook, stirring occasionally, until warmed.Step 4To assemble: Top each tortilla with some eggs, Spam, and beans, serving with a drizzle of hot sauce if desired.
These tacos were made with canned beans, corn tortillas, scrambled eggs, and a can of Spam which Julia had requested and which I could not turn down. Aside from getting carried away with the seasoning and getting a little heavy-handed with the sodium—I learned that Spam is already VERY salty straight out of the can—these turned out pretty delicious! There’s a nice subtle, smoky essence winding through every bit of every bite. I used whatever spices I had on hand, so please feel free to substitute in what you have on hand for your version of this recipe!
