Ingredients
1/2 cup water1/2 cup sugar2 tablespoons lemon juice1 tablespoon cornstarch1 teaspoon grated lemon zest1 cup fresh or frozen blueberries2 small cantaloupes, halved and seeded2 cups vanilla ice creamFresh mint, optional
Preparation
In a small saucepan, combine the first 5 ingredients; bring to a boil over medium heat. Boil and stir until thickened, about 2 minutes. Add blueberries; cook until heated through. Fill cantaloupe with ice cream; top with sauce. Garnish with mint if desired.
