Ingredients
1/3 cup shortening2/3 cup sugar1 egg1-3/4 cups all-purpose flour2 teaspoons baking powder1/4 teaspoon baking soda1/4 teaspoon salt1 cup mashed ripe cantaloupe, drained1/2 cup chopped nuts
Preparation
In a large bowl, cream shortening and sugar until light & fluffy. Beat in egg. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with cantaloupe until blended (mixture will appear curdled). Fold in nuts.
Transfer to a greased 8x4-in. loaf pan. Bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
