Ingredients

1 cup soft bread crumbs1-1/2 teaspoons Caribbean jerk seasoning1/4 cup mango chutney1/2 teaspoon salt1/2 teaspoon pepper4 lamb loin chops (2 inches-thick and 8 ounces each)

Preparation

Preheat oven to 450°. In a shallow bowl, combine bread crumbs and jerk seasoning; set aside. Combine the chutney, salt and pepper; spread over both sides of lamb chops. Coat with crumb mixture.

Place lamb chops on a rack coated with cooking spray in a shallow baking pan. Bake 20-25 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium 140°; medium-well, 145°).
