1 bunch romaine, torn1 cup shredded Swiss cheese1 cup salted cashews1 medium pear, thinly sliced1/2 cup dried cranberriesPOPPY SEED VINAIGRETTE:2/3 cup olive oil1/2 cup sugar1/3 cup lemon juice2 to 3 teaspoons poppy seeds2 teaspoons finely chopped red onion1 teaspoon prepared mustard1/2 teaspoon salt
Preparation
In a large salad bowl, combine the romaine, cheese, cashews, pear and cranberries. In a small bowl, whisk the vinaigrette ingredients. Drizzle over salad and toss to coat.
