Ingredients

1/4 cup reduced-fat mayonnaise2 tablespoons reduced-fat plain yogurt1 green onion, chopped1/4 teaspoon salt1/4 teaspoon pepper1-1/2 cups cubed cooked turkey breast1/4 cup thinly sliced celery2 tablespoons chopped dried apricots2 tablespoons chopped unsalted cashews8 slices pumpernickel bread4 lettuce leaves

Preparation

In a bowl, mix the first 5 ingredients. Stir in turkey, celery, apricots and cashews.

Line half of the bread slices with lettuce. Top with turkey mixture and remaining bread.
