Ingredients

3 bell peppers, halved top to bottom

1 lb. ground beef

1/2 small onion, finely chopped

1 large egg

1 tbsp. Worcestershire sauce

1 tbsp. yellow mustard

1 tbsp. ketchup

Kosher salt

Freshly ground black pepper

6 slices yellow cheddar

1/3 c. mayonnaise 

2 tbsp. yellow mustard

1 tbsp. ketchup 

1 tbsp. apple cider vinegar 

1 tsp. paprika 

Pickle chips, for garnish

Toasted sesame seeds, for garnish

Preparation

  1. Remove seeds and veins from bell peppers and fill with meat mixture. Place in a shallow baking dish. Add 1/4 cup water to baking dish. (This will help steam the peppers.) Top each pepper with a slice of cheese and bake until peppers are tender and meat is cooked through, 30 minutes.
  2. Meanwhile, make special sauce: in a medium bowl, whisk together mayonnaise, mustard, ketchup, vinegar, and paprika.
  3. When peppers are cooked, drizzle with special sauce and garnish with pickles and sesame seeds
