Ingredients
3 cups cooked rice1 cup minced fresh parsley1/2 cup shredded cheddar cheese, divided1/3 cup chopped onion1/4 cup chopped green pepper1 garlic clove, minced2 large eggs, lightly beaten1 can (12 ounces) evaporated milk1/2 cup canola oil3 tablespoons lemon juice1 tablespoon grated lemon zest1 teaspoon salt1/2 teaspoon seasoned salt1/2 teaspoon pepper
Preparation
In a large bowl, combine the rice, parsley, 1/3 cup cheese, onion, green pepper and garlic. In another bowl, combine the eggs, milk, oil, lemon juice and zest, salt, seasoned salt and pepper. Stir into the rice mixture.
Transfer to a greased 2-qt. baking dish; sprinkle with remaining cheese. Bake, uncovered, at 350° for 40-45 minutes or until golden brown.
