Ingredients
1/2 pound ground beef1 large green pepper, diced1/2 cup chopped onion1 garlic clove, minced2 cups cooked white rice1 can (10-3/4 ounces) condensed tomato soup, undiluted4 ounces process cheese (Velveeta), cubed1 teaspoon chili powder1/4 teaspoon salt1/4 teaspoon pepper
Preparation
In a skillet, cook the beef, green pepper, onion and garlic over medium heat until meat is no longer pink; drain. Add the rice, soup, cheese, chili powder, salt and pepper. Cook until cheese is melted. Transfer to a 3-cup baking dish. cover and bake at 350° for 30-35 minutes.
