Ingredients
1 cup all-purpose flour1/3 cup sugar1 teaspoon baking powder1/4 teaspoon salt1 egg1/3 cup 2% milk1/4 cup canola oil1 teaspoon almond extract1/2 cup halved maraschino cherries1/2 cup semisweet chocolate chips
Preparation
In a small bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the egg, milk, oil and extract. Stir into dry ingredients just until moistened. Fold in cherries and chocolate chips.
Fill paper-lined muffin cups three-fourths full. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.
