Ingredients

1 cup butter, softened1 cup packed brown sugar1/2 cup sugar2 large eggs, room temperature1 teaspoon vanilla extract1-1/2 cups all-purpose flour2 teaspoons ground cinnamon1 teaspoon baking soda1/4 teaspoon salt3 cups old-fashioned oats1/2 cup chopped dried apples

Preparation

Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine the flour, cinnamon, baking soda and salt; gradually add to creamed mixture and mix well. Stir in oats and apples.

Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until golden brown, 10-12 minutes. Let stand for 1 minute before removing to wire racks.
