Ingredients
3/4 cup shortening1-1/4 cups sugar, divided1 large egg, room temperature1/4 cup molasses1 teaspoon vanilla extract2 cups all-purpose flour1 teaspoon ground cinnamon1 teaspoon ground ginger1 teaspoon baking soda1/2 teaspoon salt1/2 teaspoon ground cloves
Preparation
Preheat oven to 375°. In a large bowl, cream shortening and 1 cup sugar until light and fluffy. Beat in the egg, molasses and vanilla. Combine dry ingredients; add to creamed mixture and mix well.
Roll into 1-in. balls; roll in remaining 1/4 cup sugar. Place dough balls 1-1/2 in. apart on ungreased baking sheets.
Bake for 10 minutes or until lightly browned. Remove to wire racks. Store in an airtight container.
