VINAIGRETTE:1/4 cup balsamic vinegar1/4 cup orange juice1/4 cup olive oil2 tablespoons lemon juice2 tablespoons reduced-sodium soy sauce1 tablespoon brown sugar1 tablespoon Dijon mustard1/2 teaspoon curry powder, optional1/2 teaspoon salt1/4 teaspoon pepper1/4 teaspoon ground gingerSALAD:2 cups shredded cooked chicken2 medium apples, chopped1/2 cup thinly sliced red onion10 cups torn mixed salad greens1/2 cup chopped walnuts, toasted
Preparation
In a large bowl, whisk the vinaigrette ingredients until blended. Add chicken, apples and onion; toss to coat. Just before serving, place greens on a large serving plate; top with chicken mixture. Sprinkle with walnuts.
