Ingredients

2 cups cooked chicken strips2 anchovy fillets, finely chopped, optional1/2 cup mayonnaise1 tablespoon grated Parmesan cheese1 tablespoon red wine vinegar1 teaspoon Worcestershire sauce1 teaspoon Dijon mustard1 garlic clove, minced1/2 large bunch romaine lettuce, torn1 small red onion, sliced into rings1 carrot, julienned

Preparation

In a large bowl, combine the first eight ingredients. Just before serving, stir in lettuce, onion and carrot; toss to coat.
