Ingredients
3/4 pound boneless skinless chicken breasts, cubed3 cups reduced-sodium chicken broth1-1/2 cups uncooked brown rice4 ounces reduced-fat smoked turkey sausage, diced1/2 cup thinly sliced celery with leaves1/2 cup chopped onion1/2 cup chopped green pepper2 to 3 teaspoons Cajun or Creole seasoning1 to 2 garlic cloves, minced1/8 teaspoon hot pepper sauce1 bay leaf1 can (14-1/2 ounces) no-salt-added diced tomatoes, undrainedChopped green onions, optional
Preparation
In a large skillet lightly coated with cooking spray, saute chicken for 2-3 minutes or until chicken is no longer pink. Stir in the next 10 ingredients. Bring to a boil. Reduce heat; cover and simmer for 50-60 minutes or until heated through.
Stir in tomatoes; cover and simmer 10 minutes longer or until liquid is absorbed and rice is tender. Remove from the heat; let stand for 5 minutes. Discard bay leaf. Serve with green onions if desired.
