Ingredients

10 Sister Schubert dinner yeast rolls, headed according to package directions

2 tbsp. butter 

1 1/2 c. sliced baby bella mushrooms

1 shallot, finely chopped 

kosher salt

freshly ground black pepper

3 oz. white wine 

1/4 c. chicken broth

3 oz. softened cream cheese 

2 c. shredded rotisserie chicken 

1 1/2 c. chopped fresh spinach or arugula 

1 c. shredded mozzarella 

Preparation

Step 1Preheat oven to 350º and carefully cut prepared rolls in half horizontally, leaving one part of the roll connected.

Step 1Heat a large skillet over medium to high heat. Melt butter, then add mushrooms, and cook them until golden on one side. Stir in shallots and season with salt and pepper. Continue sautéing mushroom mixture for 3 to 4 more minutes, until tender and golden. Deglaze pan with white wine, then add in broth and stir in cream cheese. Stir until cream cheese is completely melted. Add in chicken and remove from heat.

Step 1Place a small amount of chopped spinach on bottom bun and top with some mozzarella being careful not to separate the buns. Add a heaping spoonful of mushroom mixture each bun and place more cheese on top. Return rolls to oven for 5 to 7 minutes until cheese is melted.
