Ingredients
4 boneless skinless chicken breast halves (4 ounces each)1 can (6 ounces) tomato paste3/4 cup water2 garlic cloves, minced1 tablespoon dried parsley flakes1 teaspoon salt1/4 teaspoon pepper1/2 teaspoon Italian seasoning1/2 teaspoon dried oregano1/4 teaspoon crushed red pepper flakes, optional2 cups shredded part-skim mozzarella cheese1/4 cup grated Parmesan cheese
Preparation
Place the chicken in a greased 8-in. square baking dish. In a small saucepan, bring the tomato paste, water, garlic and seasonings to a boil. Pour over chicken.
Bake, uncovered, at 400° for 15 minutes. Sprinkle with cheeses; bake 10-15 minutes longer or until a thermometer reads 165°.
