Ingredients
2 cups uncooked spiral pasta2 cups cubed cooked turkey1-1/2 cups fresh or frozen snow peas, thawed1/2 cup chopped sweet red pepper1/2 cup chopped green pepper1/4 cup thinly sliced green onions1/4 cup diced celery1 can (8 ounces) sliced water chestnuts, drained1 jar (2 ounces) diced pimientos, drained1 cup mayonnaise2 tablespoons soy sauce1 teaspoon sugar1 teaspoon ground ginger1/4 to 1/2 teaspoon hot pepper sauce1 cup salted cashews halves, divided
Preparation
Cook pasta according to package directions; drain and rinse in cold water. Place in a large bowl; add the turkey and vegetables.
In a small bowl, combine the mayonnaise, soy sauce, sugar, ginger and hot pepper sauce. Stir in 1/2 cup cashews. Pour over pasta mixture and toss to coat. Cover and refrigerate for at least 1 hour before serving. Sprinkle with remaining cashews.
